Mushroom Barley Stuffing
To fill Mushroom Barley Stuffed Cabbage
Ingredients
- 2 ounces (dry weight) reconstituted dried black mushrooms
- 1/3 cup barley
- 1/2 pound fresh domestic mushrooms
- 4 T. olive oil
- 1 large onion, chopped
- salt and pepper to taste
Chop the reconstituted (very clean) mushrooms. Wash and chop the fresh
mushrooms. Heat the oil, and sauté the onions and mushrooms. Season
with salt and pepper. Sauté for another 10 minutes. Cook the barley
on the stove or in the microwave. Add the soft barley to the mushroom
mixture, and add about 1 cup broth or water. Simmer for 1/2 hour, covered.
