Buttermilk Pancakes
Everyone loves to wake up to pancakes or fresh bagels, and pancakes are easier. The
other great time to make pancakes is when you just can't figure out what to make for
supper, but you have some fresh buttermilk and some fresh blueberries. Get the kids
involved by letting them shape the batter into people or funny objects.
Ingredients
- 1 cup fresh buttermilk
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 cup all-purpose flour
- 1/4 tsp. salt
- 2 tsp. sugar
- 1 large egg
- 2 T. melted butter
- 1/2 cup fresh blueberries (optional)
Put dry ingredients into mixing bowl. Add beaten egg, buttermilk, and butter. Beat until just smooth. Drop from spoon onto a hot buttered griddle. Cook until tiny bubbles form, turn and cook on other side. Serve with pure, real maple syrup.
