In the late '80's, my husband and I had a wonderful vacation in Victoria, British Columbia at The Bedford. We
were pleased when the chef agreed to share his granola recipe with us. It's far better
than commercial versions and is easily varied and expanded.
Combine the above, toast for 5-10 minutes at 350°F; stir well,
and remove from the oven when just slightly brown. Then add:
- 4 cups rolled oats
- 1 cup whole bran
- 1 cup coconut flakes
- 1 cup nuts (mixture of walnuts, pecans, almonds, hazelnuts)
- 1 cup sunflower seeds
Combine the above, allow to cool completely, and store in the freezer or in a
tightly sealed jar.
- 1 cup raisins
- 3/4 cup canola oil
- 3/4 cup honey
- 1/4 tsp. pure vanilla
